As part of the Nutrition and Dietetics curriculum which highlights the importance of applying theoretical acquisition to field trips and site visits, students in the Department of Nutrition and Dietetics had the chance to witness live processing in one of the most advanced factories in Lebanon: “Hawa Chicken” premises in Anfe on Wednesday 24th May.
Upon arrival at the site, Mr. Joe Naoum (the food safety team leader) gave a detailed presentation on Hawa Chicken scope of work and food safety/quality management systems.
Following the presentation, students toured the slaughter house and had a detailed explanation of the slaughtering process (receiving, de-feathering, cold chilling, cutting, packing…). They also had the exclusive opportunity to visit the new processing plant and observe how nuggets and mortadelle were produced by state-of-the-art machines.
The Hawa Chicken visit was of great benefit to students as it was both informative and enlightening!
